sambar rice recipe | sambar sadam recipe | sambar rice & curd rice combo with step by step photo and video recipe. sambar masala or the combination of spices are prepared and used to prepare a spiced and flavoured lentil soup. this is eventually is mixed and served with hot and steamed rice for lunch and dinner. basically a 2 step process but not a complicated one. yet it can be simplified to prepare a one-pot meal with rice and sambar spices and vegetables are mixed to prepare a south indian version of sambar rice recipe.
rice and rice-based recipes are very common in my house and also in my family. generally, we prepare the rice and a corresponding curry, sambar or dal recipe for our day to day lunch and dinner. but we do try a one-pot meal occasionally, especially when you are feeling monotonous with the same pattern or you need something quickly. typically it is either bisi bele bath or plain khichdi, but i do prepare this simple combo meal of sambar sadam and creamy curd rice. the combo is not just filling, but also gives content and happiness. south indians meals do not finish with a bowl of curd rice to end and hence this particular combo is perhaps one of the simplest of all. the sambar sadam is prepared as a one-pot meal, and any leftover rice can be used as curd rice and you may serve it a choice of salad or spicy mango pickle as a taste enhancer.
furthermore, some more additional tips, suggestions and variants to the sambar sadam recipe. firstly, i would recommend using a basic rice option like sona masuri or ponni raw rice and avoid using basmati for this recipe. the end result must be like khichdi or mushy and hence no point in using long grain rice for this recipe. secondly, you may use a combination of vegetables for this recipe and it is completely open-ended. yet try to limit the quantity and number of vegetable options as it may overpower the flavour of spices and rice and lentil combo. lastly, once the rice is rested, it would turn thick due to the lentil. hence you may have to add water before it is reheated and served.

Ingredients
for masala paste:
- 1 tsp oil
- 1 tbsp chana dal
- 1 tsp coriander seeds
- ¼ tsp methi
- ½ tsp pepper
- 6 dried red chilli
- few curry leaves
- 2 tbsp coconut, grated
- ½ cup water, for grinding
for pressure cooking:
- 1 cup rice
- ½ cup toor dal, soaked 20 minutes
- ¼ tsp turmeric
- 1 tsp oil
- 4½ cup water
for sambar sadam:
- 2 tbsp oil
- 1 tbsp ghee
- 1 tsp mustard
- 2 dried red chilli
- pinch hing
- few curry leaves
- 6 shallots, halves
- 1 potato, chopped
- 1 carrot, chopped
- 15 piece drumstick
- 6 beans, chopped
- 1 tomato, chopped
- ½ tsp turmeric
- 1 tsp salt
- 1 cup tamarind extract
- water, as required
- 2 tbsp coriander, finely chopped
Instructions
how to make masala paste for sambar sadam recipe:
firstly, in a thick bottomed pan heat1 tsp oil. add 1 tbsp chana dal, 1 tsp coriander seeds, ¼ tsp methi and ½ tsp pepper.
roast until the spices turn aromatic.
now add6 dried red chilli and few curry leaves. roast until they turn crisp.
turn off the flame and add2 tbsp coconut. roast until the coconut turns aromatic.
cool completely, and transfer to the mixi jar.
add½ cup water and blend to smooth paste.
how to cook rice and dal:
firstly, in a pressure cooker take1 cup rice and ½ cup toor dal. make sure to soak the dal for at least 20 minutes.
add¼ tsp turmeric, 1 tsp oil and 4½ cup water.
cover and pressure cook for 5 whistles.
how to make sambar rice or south indian style sambar sadam:
firstly, in a large kadai heat2 tbsp oil, 1 tbsp ghee. splutter 1 tsp mustard, 2 dried red chilli, pinch hing and few curry leaves.
add6 shallots and saute for a minute.
also add1 potato,1 carrot,15 piece drumstick, 6 beans and1 tomato.
further, add ½ tsp turmeric and 1 tsp salt.
saute for a minute or until the vegetables turn aromatic.
now add 1½ cup water, cover and boil for 10 minutes or until the vegetables are cooked well.
furthermore, add 1 cup tamarind extract and boil for 3 minutes or until the raw flavour of tamarind goes away.
add in the prepared masala paste and mix well.
once everything comes to a boil add in cooked rice and dal.
mix well and add water as required adjusting the consistency.
cover and simmer for 5 minutes or until the flavours are absorbed well.
finally, garnish with coriander and enjoy sambar rice or sambar sadam with curd rice and boondi.

- also, if you looking to store the masala powder then you can roast the spices and powder it without adding water.
- additionally, adjust the consistency of rice before serving as it thickens once cooled.
- finally, sambar rice recipe or sambar sadam tastes great when topped with ghee.
