Keto Pork Stir Fry with Cashews

I love this low carb pork stir fry and make it for friends and family, even for people who are not following Keto. We oftentimes serve it over cauliflower fried rice and I serve it with rice for others who do not like it with the cauliflower rice.

What Cut of Pork Is Best for Stir Fry?

I am using pork shoulder for this stir fry. You can also use pork chops that are cut into bite sized pieces. Ground pork can also be used.

How do I Know Pork is Done Cooking?

The best way to tell if pork is done is to use a thermometer. Pork should be cooked to 145 and ground pork should be cooked to 160.

If you do not have a thermometer you want to check to see if the pork is cooked, you want to make sure that juices run clear or very light pink.

How Many Net Carbs are in this Keto Pork Stirfry

This is one of my favorite Keto dinners. Because we love it so much, I like to make a large batch and then eat it for lunch over a few days. There is a total of 6.59g carbs with 1.20g of fiber. That means this recipe has 5.39 g of net carbs.

Variations to Pork Stirfry

You can change this pork stir fry by changing the pork shoulder for pork tenderloin and ground pork.

Add more vegetables that you like, including green beans, just make sure that the vegetables are keto friendly.

Stir Fry Sauce – Some people like to make the pork stir fry recipe with a premade sauce or to make a sauce with a dry sherry.

  • Pork shoulder
  • Red bell pepper
  • Green onion
  • Fresh ginger
  • Raw cashews
  • Garlic powder
  • Salt and pepper
  • Baby Bok choy
  • Toasted sesame oil

How to Make Keto Pork Stir Fry

Heat the olive oil in a wok or a large frying pan with high sides over medium-high heat. Add the pork and cook, stirring occasionally, until the pork is nicely browned on all sides, around 3-4 minutes.

Add bell pepper, green onion, cashews, ginger and garlic powder. Season with salt and pepper, to taste. Stir fry the veggies until they become crisp-tender, around 2-3 minutes.

Add the bok choy, sesame oil, and soy sauce. Continue to stir fry until the bok choy wilts and the other ingredients are coated, approximately 1-2 minutes.

Remove from heat and transfer to individual serving plates. Garnish with toasted sesame seeds, if desired, and serve immediately. Enjoy!

  • 2 T. extra virgin olive oil
  • lbs. pork shoulder thinly sliced
  • 1 medium red bell pepper thinly sliced
  • 1 green onion thinly sliced
  • 1 t. fresh ginger finely minced
  • 1/3 c. raw cashews
  • ½ t. garlic powder
  • Sea salt and black pepper to taste
  • 1 bunch baby Bok choy leaves separated
  • 3 T. toasted sesame oil
  • 2 T. soy sauce
  • Optional: 2 T. toasted sesame seeds for garnish
