St. Patrick’s Day honestly happens to be one of my all-time favorite days of the year. I may not be 100% Irish. But still the smaller portion genetically that is revels in this day.
So makes sense that Valentine’s Day is now behind us that I begin to share my absolutely love and adoration for this most fun, green colored luck of the Irish day.
Trust me in the weeks to come here, I will most definitely have St. Patrick’s Day on display. For one thing, I married a man who is indeed 100% Irish. So between my love and his love for this day, we are in no short supply for St. Patrick’s Day inspiration around these parts.

One of the fun traditions for St. Patrick’s Day are Leprechauns.
First of all, I happen to be on the shorter side measuring only 5’2″. My husband is almost a foot taller than me. So one of his enduring references for me over the years has been a leprechaun. His humor never seems to fail, especially on this. Plus, as my girls first few years of school both in pre-school and elementary school, they always had the obligatory leprechaun visit.
So also makes sense to make Leprechaun Fudge for our family. It is truly a fun and yummy way to celebrate getting in the mood for St. Patrick’s Day.

Leprechaun Fudge Dessert Recipe

Leprechaun Fudge Dessert Recipe
Ingredients
- 1 ½ Sticks of butter
- 2 ½ cups Sugar
- ⅔ cup half and half
- 1 tsp. Vanilla
- 1 Jar of marshmallow fluff, 7 oz.
- 1 c. White chocolate chips
- Regular green and neon green food coloring
- St. Patrick’s Day sprinkles
Instructions
- Begin by placing 1 ½ sticks of butter in a pot over medium heat. Stir until they are melted.
- Add the sugar and half and half to the pot, and stir until smooth. Continue to stir often scraping the bottom until the mixture comes to a light boil.
- Add the vanilla once the mixture begins to boil, and continue boiling lightly while stirring constantly for about 4 minutes.
- After 4 minutes, take the pot off of the heat and mix in the white chocolate chips and marshmallow fluff until smooth.
- Place the pot back on a burner on low heat stirring every once in a while.
- While the mixture stays warm in the pot, pour small batches of it into individual bowls one at a time. Add food coloring to the batches to make different shades of green. Be sure to only work with one batch at a time and leave the rest in the pot on low heat to stay warm. If you try to do all of the batches of color at once, they will harden before you can layer them and will be less spreadable.
- Line a 9x9 baking pan with parchment paper and top the paper with some spray cooking oil.
- Pour the first batch of colored mixture into the pan and smooth out with a spoon or spatula.
- Continue to make batches of different colors one at a time, and layer them on top of each other in the pan. Be sure to spread each color completely over the last, all of the way to the edge of the pan.
- Once you have completed your layers, top off the fudge with some St. Patrick’s Day sprinkles and gently push them into the fudge if needed.
- Place the fudge in a freezer for about an hour until it has hardened and cooled completely.
